Ingredients
- Crumble Topping
- 1/3 cup flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 1/4 cup butter, melted
- Muffins
- 1 1/2 cups flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/3 cup milk
- 1 cup ricotta or sour cream- room temp
- 1/4 cup butter, melted and slightly cooled
- 1 large egg
- Icing
- 1 TBSP butter, melted
- 1/8 tsp salt
- 1 cup powdered sugar
- 2 TBSP milk
Directions
- Set oven to 425 and spray or line a muffin tin with liners
- Make crumb topping by combining all crumble ingredients and incorporating with a fork until all coming together. Freeze until needed
- In a large bowl, combine all muffin ingredients (dough will be thick)
- Fill muffin tins with muffin batter
- Top with crumble topping
- Place muffin tin in the oven and bake at 425 for 5 minutes. Then, without opening the oven door, reduce heat to 350 and bake for another 11-14 minutes or until the tops are golden brown
- Mix icing ingredients and set aside
- Remove from oven and let cool completely before drizzling with icing
