Venison Egg Roll in a Bowl

This is definitely going to be added to our rotation of recipes! It was so good, took minimal time, and is low carb- perfect for us! As always, you don’t have to use venison, you can use whatever ground meat you have available to you.

Ingredients

  • 2lbs ground venison (or meat of choice)
  • 2 TBSP butter
  • 1 onion- finely chopped
  • 1 orange bell pepper- chopped
  • 2 cups grated carrots
  • 1/2 head of purple cabbage, sliced
  • 2 TBSP minced garlic
  • 1 TBSP lime juice
  • 1 orange- juiced
  • 1/2 cup soy sauce or liquid aminos
  • For topping: chopped green onions, sesame seeds, sriracha mayo, etc

Directions

  • Over medium heat, add 1 TBSP butter and ground meat. Cook until browned. Drain and set aside
  • While meat is cooking, prep and chop veggies
  • Add 1 TBSP butter to pan and add onions and peppers, cook for 5 minutes
  • Add carrots and cabbage- stir frequently and cook another 7 minutes
  • Add garlic, lime juice, orange juice, soy sauce, meat
  • Stir to combine and cook an additional 5-7 minutes, covered
  • Serve and enjoy!
