This easy side dish is so flavorful and one you will want to make again and again! Lucky for us, I had almost everything I needed: the garden freezer stash, the remaining honey from my bees, and basil from my indoor garden! Next year, my plan is to make goat cheese!
Ingredients
- 5 medium zucchinis- cut into 1/2-inch thick long pieces
- Salt
- 2 TBSP chopped basil
- 1/3 cup goat cheese crumbles
- 2 TBSP honey
Directions
- Slice zucchinis on the cutting board. Cover with salt and leave for 20 minutes
- Dap moisture away
- On a grill or grill top on the stove, cook zucchini for 10-15 minutes each side
- Once plated, top with cheese, basil, and honey
- Add additional salt if needed
- Enjoy!
