Honey Basil Grilled Zucchini with Goat Cheese

This easy side dish is so flavorful and one you will want to make again and again! Lucky for us, I had almost everything I needed: the garden freezer stash, the remaining honey from my bees, and basil from my indoor garden! Next year, my plan is to make goat cheese! 

Ingredients

  • 5 medium zucchinis- cut into 1/2-inch thick long pieces
  • Salt
  • 2 TBSP chopped basil
  • 1/3 cup goat cheese crumbles
  • 2 TBSP honey

Directions

  • Slice zucchinis on the cutting board. Cover with salt and leave for 20 minutes
  • Dap moisture away 
  • On a grill or grill top on the stove, cook zucchini for 10-15 minutes each side
  • Once plated, top with cheese, basil, and honey
  • Add additional salt if needed
  • Enjoy!
