I searched far and wide for a casserole with scalloped potatoes that didn’t call for ham (as I wanted to use venison sausage). I sort of combined a quiche recipe with a casserole recipe and subbed the hash browns for scalloped potatoes and it turned out perfect- the potatoes made the best crust on the bottom! As always, your can use you any kind of sausage, we just use venison as that’s all we have in our freezers. Enjoy!
Ingredients
- 2lbs venison sausage (crumbles)
- 10 eggs
- 1 yellow onion- chopped
- 1 red pepper- chopped
- 1 can green chiles- mild
- 1 bag sharp cheddar cheese
- 1 box scalloped potatoes
Directions
- Set oven to 350 and spray 9×13 pan
- In a skillet over medium heat, cook sausage. Once cooked and drained, add pepper and onion and cook until translucent
- In a bowl, add eggs and whisk. Add sausage mixture and 1/2 bag of cheese
- In prepped pan, layer potatoes and poor egg mixture on top
- Add remaining cheese
- Bake for 25-30 minutes
- Allow to cool slightly before cutting and serving
