Banana Bread Chocolate Chip Cookies

Ingredients

  • 1 overripe banana, mashed
  • 1/2 cup melted butter
  • 1/2 cup light brown sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 1/3 cup Kamut or all-purpose flour
  • 1/2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2/3 cup chocolate chips or chunks

Directions

  • In a mixing bowl, combine banana, melted butter, brown sugar, egg, and vanilla extract
  • Add the remaining ingredients, and then once combined, fold in the chocolate chips or chunks
  • Let the dough rest for 15 minutes and set the oven to 350
  • Once the oven is ready, spoon 2-3 TBSP of dough onto a cookie sheet (makes about 14 cookies), spaced apart
  • Bake for 6 minutes. Remove the cookies from the oven and, if desired, gently flatten and shape them. Return the cookies to the oven and bake for an additional 6 minutes, or until the edges are golden brown.
  • Let cool before serving!

    I’ve made these twice now for my kids and they love them! I added an extra banana the last time I made than and they turned out just as good!
