Ingredients
- 1 overripe banana, mashed
- 1/2 cup melted butter
- 1/2 cup light brown sugar
- 1 large egg yolk
- 1 tsp vanilla extract
- 1 1/3 cup Kamut or all-purpose flour
- 1/2 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp salt
- 2/3 cup chocolate chips or chunks
Directions
- In a mixing bowl, combine banana, melted butter, brown sugar, egg, and vanilla extract
- Add the remaining ingredients, and then once combined, fold in the chocolate chips or chunks
- Let the dough rest for 15 minutes and set the oven to 350
- Once the oven is ready, spoon 2-3 TBSP of dough onto a cookie sheet (makes about 14 cookies), spaced apart
- Bake for 6 minutes. Remove the cookies from the oven and, if desired, gently flatten and shape them. Return the cookies to the oven and bake for an additional 6 minutes, or until the edges are golden brown.
- Let cool before serving!
