Ingredients
- Cookies
- 1/2 cup unsalted butter (melted and cooled for at least 15 minutes)
- 1/3 cup sugar
- 1/2 cup brown sugar, tightly packed
- 1/4 cup pure pumpkin
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp baking soda
- 1/4 tsp cream of tartar
- 1/2 tsp salt
- Cinnamon Topping
- 1/4 cup sugar
- 2 tsp cinnamon
Directions
- Combine the butter, sugar, and brown sugar, stirring until well combined. Add pumpkin and stir well
- Gradually add all remaining ingredients and stir until well combined
- Cover the cookie dough with clear wrap and place it in the fridge to chill for at least 45 minutes
- Set oven to 350 and prep cookie sheets
- Once chilled, combine the sugar and cinnamon topping in a bowl
- Roll chilled dough into balls and roll in the cinnamon sugar topping
- Place rolled dough onto cookie sheets (spaced apart)
- Bake for 10 – 12 minutes
- Remove from oven, let cookies cool, and enjoy
