Creamy Pesto Salmon Pasta

Ingredients

  • 8 ounces uncooked pasta 
  • 1 pound fresh salmon
  • Salt & pepper to taste
  • 1/4 teaspoon garlic powder
  • 1 tsp fish seasoning of choice
  • 1/2 TBSP oil
  • 1/2 cup broth
  • 1/3 cup pesto
  • 1/2 cup heavy/whipping cream
  • 1/2 teaspoon lemon juice, see note
  • Freshly grated Parmesan cheese (optional)

Directions

  • Bring a medium pan to a boil and cook your pasta al dente per package directions
  • Sprinkle the salmon with the  fish seasoning 
  • In a skillet, heat the oil over medium-high heat. Cook the salmon for about 3 minutes/side until lightly golden (I prefer to dice mine as it cooks more evenly)
  • To the cooked salmon, add broth, pesto, cream, and lemon juice. Reduce the heat and let it cook gently for 3-5 minutes or until the sauce thickens 
  • Drain the pasta and toss it in the sauce
  • Serve with grated Parmesan cheese if desired
