Ingredients
- 8 ounces uncooked pasta
- 1 pound fresh salmon
- Salt & pepper to taste
- 1/4 teaspoon garlic powder
- 1 tsp fish seasoning of choice
- 1/2 TBSP oil
- 1/2 cup broth
- 1/3 cup pesto
- 1/2 cup heavy/whipping cream
- 1/2 teaspoon lemon juice, see note
- Freshly grated Parmesan cheese (optional)
Directions
- Bring a medium pan to a boil and cook your pasta al dente per package directions
- Sprinkle the salmon with the fish seasoning
- In a skillet, heat the oil over medium-high heat. Cook the salmon for about 3 minutes/side until lightly golden (I prefer to dice mine as it cooks more evenly)
- To the cooked salmon, add broth, pesto, cream, and lemon juice. Reduce the heat and let it cook gently for 3-5 minutes or until the sauce thickens
- Drain the pasta and toss it in the sauce
- Serve with grated Parmesan cheese if desired
