Peanut Butter Cottage Cheese Cheesecakes

Ingredients (yields a dozen)

  • Crust Ingredients
    • 2 cups graham crackers
    • 3 TBSP honey or maple syrup
    • 1 TBSP melted butter
  • Cheesecake Filling
    • 2 cups cottage cheese
    • 1/3 cup peanut or almond butter
    • 1 cup greek yogurt
    • 2 TBSP honey
    • Pinch of salt
  • Toppings (optional)
    • Melted peanut butter
    • Sea Salt
    • Chocolate chips
    • Peanuts

Directions

  • In a food processor, combine crust ingredients (texture should be like wet sand)
  • Once that is combined, press into 12 muffin tins and refrigerate
  • Blend the cheesecake filling ingredients in a food processor
  • Fill each muffin tin with filling and refrigerate for at least an hour (the longer the better)
  • Top with toppings of choice or enjoy as is!
