Ingredients (yields a dozen)
- Crust Ingredients
- 2 cups graham crackers
- 3 TBSP honey or maple syrup
- 1 TBSP melted butter
- Cheesecake Filling
- 2 cups cottage cheese
- 1/3 cup peanut or almond butter
- 1 cup greek yogurt
- 2 TBSP honey
- Pinch of salt
- Toppings (optional)
- Melted peanut butter
- Sea Salt
- Chocolate chips
- Peanuts
Directions
- In a food processor, combine crust ingredients (texture should be like wet sand)
- Once that is combined, press into 12 muffin tins and refrigerate
- Blend the cheesecake filling ingredients in a food processor
- Fill each muffin tin with filling and refrigerate for at least an hour (the longer the better)
- Top with toppings of choice or enjoy as is!
