Ingredients
- Graham Cracker Crust
- 100g graham crackers
- 2 TBSP butter, melted
- 1 TBSP maple syrup or honey
- (you could also use a store-bought crust)
- Cottage Cheese Cream
- 1 1/2 cups cottage cheese
- 1/2 cup Greek yogurt
- 2 whole eggs
- 1/4 cup maple syrup or honey
- 1/3 cup flour
- 1 tsp vanilla or almond extract
- 2 tsp lemon juice
Directions
- Set oven to 330
- In a food processor, combine graham cracker crust ingredients until they come together like wet sand
- Line a pie tin with parchment paper and press the crust into the pan
- Bake the crust for 20 minutes
- While the crust is baking, combine all of the cream ingredients in a food processor and blend until smooth
- Once the crust comes out, turn the oven to 350 and pour the cream over the crust
- Bake cheesecake for 40 – 45 minutes or until it has set
- Let it cool at room temperature first and then refrigerate for at least 2 hours (8 is best) before serving
- Top with fruit, sauce, etc, and enjoy!
