Cottage Cheese Cheesecake

Ingredients

  • Graham Cracker Crust
    • 100g graham crackers
    • 2 TBSP butter, melted
    • 1 TBSP maple syrup or honey
    • (you could also use a store-bought crust)
  • Cottage Cheese Cream
    • 1 1/2 cups cottage cheese
    • 1/2 cup Greek yogurt
    • 2 whole eggs
    • 1/4 cup maple syrup or honey
    • 1/3 cup flour
    • 1 tsp vanilla or almond extract
    • 2 tsp lemon juice

Directions 

  • Set oven to 330
  • In a food processor, combine graham cracker crust ingredients until they come together like wet sand
  • Line a pie tin with parchment paper and press the crust into the pan
  • Bake the crust for 20 minutes
  • While the crust is baking, combine all of the cream ingredients in a food processor and blend until smooth
  • Once the crust comes out, turn the oven to 350 and pour the cream over the crust
  • Bake cheesecake for 40 – 45 minutes or until it has set
  • Let it cool at room temperature first and then refrigerate for at least 2 hours (8 is best) before serving
  • Top with fruit, sauce, etc, and enjoy!
