Healthy Banana Nut Muffins

Ingredients

  • 1 1/2 cups Kamut flour (or 1 3/4 cup all-purpose)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 ripe bananas (about 1 cup mashed)
  • 1/4 cup honey
  • 1/2 TBSP cinnamon
  • 1/2 TBSP vanilla extract or almond extract
  • 1 TBSP melted coconut oil
  • 1 egg
  • 1/2 cup vanilla or plain Greek yogurt
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts or pecans

Directions

  • Set your oven to 350 and spray a muffin tin or line with liners
  • In a bowl, combine all ingredients, mixing in the chocolate chips and nuts last
  • Once combined, divide your mixture into 12 muffin tins
  • Bake for 20 – 25 minutes (until a toothpick comes out clean)
  • Let cool for 5 minutes and then remove to cool on a cooling rack
  • Enjoy!
