Potato and Hamburger Casserole (with Antelope)

Ingredients

  • 2lbs ground antelope (or any ground meat)
  • 4 large potatoes or 6 medium potatoes (peeled and thinly sliced)
  • 1 medium onion (chopped)
  • 2 cups of shredded cheddar cheese
  • 1 can of cream of mushroom soup
  • 3/4 cup whole milk
  • 1 tsp garlic powder
  • 2 TBSP olive oil
  • Fresh chives or parsley for garnish
  • Salt and pepper to taste

Directions 

  • Set oven to 350 and spray a 9 x 13 pan
  • In a medium skillet, add oil. Brown meat and cook onions until they are see-through
  • In a bowl, combine soup and milk. Add soup mixture to cooked meat and mix. Season the mixture with the garlic powder
  • Peel and thinly slice potatoes
  • Layer half the potatoes, half the meat mixture, and half the cheese. Then repeat (the top layer will be your cheese)
  • Cover the baking dish with foil and cook for 40 minutes. Remove foil and cook for an additional 20 minutes
  • Remove from oven, top with garnish, and enjoy once cooled
