This salad will hopefully ignite some creativity! I had a few items in my fridge that needed to be eaten or else I would have had to thrown them away in a few days so I decided to toss them all in a bowl and call it a salad! Don’t be afraid to add fruit (such as apples or pears) to a salad- the crunch is extremely pleasant! I also love fruit and onion together as well. No lettuce? No problem! Use broccoli like I did!
- 2 cups broccoli florets- diced small
- 1 apple- diced
- 1/4 onion- diced
- Handful of cashews to top
- Balsamic vinaigrette (or dressing of choice)
- In a bowl, combine all ingredients, add dressing, top with cashews (or nut or seed of choice)
