Pumpkin Sage Sauce with Elk Meatballs

Ingredients

  • 2 TBSP butter
  • 1 TBSP oil
  • 1/2 cup finely minced onion
  • 2 TBSP minced garlic
  • 2 tsp Italian Seasoning
  • 2 15oz cans pumpkin puree (not pie filling)
  • 2 cups bone broth or beef broth
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 TBSP maple syrup
  • Fresh sage to top-chopped
  • Salt and pepper to taste

Directions

  • Meatball Recipe 
  • Once our meatballs are cooked, begin the sauce
  • In a large pot, melt butter and oil
  • Add minced onion and saute for 2-3 minutes
  • Stir in the garlic, Italian seasoning, syrup, pumpkin puree, and broth
  • Allow the sauce to simmer for 2 to 3 minutes gently
  • Remove from heat and stir in cheese and heavy cream
  • Add the meatballs to the sauce to warm them through again
  • Top with sage leaves and eat as is, or serve over rice, orzo, gnocchi, etc
