Apple Fritter Cookies

As Bob Ross would say, “We don’t have mistakes; we have happy accidents.” These, my friends, were a happy accident. I intended them to be apple fritter donut bites, but I didn’t have enough flour to hold them together, so they became the softest cookies I have ever eaten. 

Ingredients

  • Dough
    • 1 1/4 cup Kamut flour (or 1.5 cups all-purpose)
    • 2 tsp baking powder
    • 1/2 tsp salt
    • 2 tsp cinnamon
    • 1/4 cup melted butter
    • 1/4 cup sugar
    • 1 large egg
    • 1/2 tsp almond or vanilla extract (I prefer to bake with almond)
    • 1/2 cup unsweetened applesauce
    • 2 medium red apples- diced
  • Apple Glaze
    • 1 cup powdered sugar
    • 1/3 cup sugar-free apple juice or apple cider

Directions

  • Preheat oven to 400 and spray a baking sheet with oil
  • In a medium bowl, combine flour, baking powder, salt, and cinnamon
  • In a large bowl, whisk butter and sugar together until combined. Whisk in the egg, almond extract, and applesauce until smooth
  • Add the dry ingredients to the wet and stir until combined. Gently fold in the diced apples
  • Scoop 1 TBSP portions of the batter and drop them a few inches apart on the baking sheet
  • Bake for 10 minutes. Remove from oven, and turn the broiler on high
  • Make the glaze by whisking together the ingredients until pourable
  • Brush the glaze of the warm bites and broil for 2-4 minutes until the glaze starts to caramelize and bubble
  • Remove and let sit for 15 minutes to allow the glaze to set before serving
