Ingredients
- 1 cup applesauce
- 2 tbsp milk of choice
- 2 tsp pure vanilla extract
- 2 tsp white or cider vinegar
- 1 cup flour (I use Kamut)
- 1/4 cup sugar or sugar substitute
- 1/2 tsp salt
- 1/2 tsp each: baking soda and baking powder
- 1/4 tsp cinnamon
- optional handful of raisins, crushed walnuts, shredded coconut, etc.
- For the topping: caramel sauce and sea salt
Directions
- Preheat oven to 350
- Either line or spray a 12-cake muffin tin (you can also do mini muffins)
- Whisk all ingredients together
- Fill each tin about 2/3 of the way- should yield 12 if you don’t have a toddler that eats batter
- Bake for 20 minutes (10 if you’re making mini muffins)
- Once cooled, add caramel drizzle and sea salt
