Ingredients
- 1 1/2 cups Kamut flour (or 1 3/4 cup all-purpose)
- 1 tsp baking soda
- 1/4 tsp salt
- 2 ripe bananas (about 1 cup mashed)
- 1/4 cup honey
- 1/2 TBSP cinnamon
- 1/2 TBSP vanilla extract or almond extract
- 1 TBSP melted coconut oil
- 1 egg
- 1/2 cup vanilla or plain Greek yogurt
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts or pecans
Directions
- Set your oven to 350 and spray a muffin tin or line with liners
- In a bowl, combine all ingredients, mixing in the chocolate chips and nuts last
- Once combined, divide your mixture into 12 muffin tins
- Bake for 20 – 25 minutes (until a toothpick comes out clean)
- Let cool for 5 minutes and then remove to cool on a cooling rack
- Enjoy!
