Ingredients
- 1 3/4 cups Kamut flour or 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 tsp ginger
- 1 tsp cloves
- 1/4 cup brown sugar
- 1/2 cup dark molasses
- 1/2 cup milk
- 1 stick butter- melted and cooled
- 2 eggs
- granulated sugar to top
Directions
- Set oven to 400 and either line a muffin tin or spray with oil (yields 12)
- In a large bowl, combine all ingredients (minus granulated sugar)
- Fill muffin tins evenly and top with granulated sugar
- Bake for 5 minutes at 400 and then reduce heat to 350 and bake an additional 10 – 12 minutes or until tops begin to crinkle
- Allow muffins to cool in the pan for 5 minutes and then transfer to a cooling or wire rack to cool completely
