My first time making scones, and I have to say- I am pretty proud of myself.
Ingredients
- Scone Ingredients
- 1 3/4 cups Kamut flour or 2 cups all-purpose flour + more for kneading
- 2 1/2 tbsp baking powder
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 1/2 cup butter, frozen
- 1/3 cup heavy cream
- 1 egg
- 1/2 cup pumpkin puree- blotted
- 1/2 cup brown sugar
- 1 tsp almond extract
- Maple Glaze
- 2 TBSP butter
- 1/3 cup maple syrup
- 1 cup powdered sugar
- Sea salt to top
Directions
- Set oven to 400. Prep a baking sheet with parchment paper
- In a large bowl, combine flour, baking powder, cinnamon, pumpkin pie spice, and salt
- On a paper towel, blot all the moisture of the pumpkin puree
- In a small bowl, combine puree, heavy cream, egg, extract, and brown sugar
- In your flour bowl, grate frozen butter and then mix with your hands until crumbles appear
- Add pumpkin mixture to flour and stir gently until combined
- On a floured surface, add dough and roll it into an 8-inch disk
- Cut into 8 even pieces and transfer to the prepped cookie sheet
- Bake for 22 – 25 minutes
- Once cooled, melt butter and syrup together in a saucepan over medium heat
- Once melted, remove from heat, add, powdered sugar, and mix
- Let the glaze cool slightly, and then top scones with glaze and salt
- Enjoy!
