I try to include macros for my protein recipes
1 Muffin: 206 calories / 9g fat / 23g carbs / 7g protein
Ingredients
- Muffin Ingredients
- 1 cup Kamut flour or All-Purpose
- 2 scoops Bowmar Nutrition Protein Pumpkin Spice (can omit and do an additional 3/4 cup flour)
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/8 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/3 cup sugar
- 1/4 cup brown sugar
- 1 10oz can pumpkin puree (not pie filling)
- 1 egg
- 1/4 cup olive oil
- 1/2 tsp almond extract
- Cream Cheese Ingredients
- 1/2 cup cream cheese- softened
- 2 TBSP sugar
- Cinnamon Sugar Topping Ingredients
- 1 TBSP sugar
- 1/2 tsp ground cinnamon
- Pumpkin seeds
Directions
- Set oven to 350. Line a muffin tin or spray with oil and set aside
- In a large bowl, combine all muffin ingredients and stir- do not over-mix
- Evenly fill amongst all 12 in the muffin tin
- Mix your cream cheese ingredients and top each muffin with an even amount
- Mix cinnamon sugar topping and sprinkle over the cream cheese
- Bake for 18-22 minutes or until muffins are beginning to crust on top (you’ll know)
- Let cool and enjoy!
