As Bob Ross would say, “We don’t have mistakes; we have happy accidents.” These, my friends, were a happy accident. I intended them to be apple fritter donut bites, but I didn’t have enough flour to hold them together, so they became the softest cookies I have ever eaten.
Ingredients
- Dough
- 1 1/4 cup Kamut flour (or 1.5 cups all-purpose)
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/4 cup melted butter
- 1/4 cup sugar
- 1 large egg
- 1/2 tsp almond or vanilla extract (I prefer to bake with almond)
- 1/2 cup unsweetened applesauce
- 2 medium red apples- diced
- Apple Glaze
- 1 cup powdered sugar
- 1/3 cup sugar-free apple juice or apple cider
Directions
- Preheat oven to 400 and spray a baking sheet with oil
- In a medium bowl, combine flour, baking powder, salt, and cinnamon
- In a large bowl, whisk butter and sugar together until combined. Whisk in the egg, almond extract, and applesauce until smooth
- Add the dry ingredients to the wet and stir until combined. Gently fold in the diced apples
- Scoop 1 TBSP portions of the batter and drop them a few inches apart on the baking sheet
- Bake for 10 minutes. Remove from oven, and turn the broiler on high
- Make the glaze by whisking together the ingredients until pourable
- Brush the glaze of the warm bites and broil for 2-4 minutes until the glaze starts to caramelize and bubble
- Remove and let sit for 15 minutes to allow the glaze to set before serving
