Ok ok, here me out; I was originally going to use ricotta cheese in this recipe but decided to use cottage cheese instead for the added protein and these turned out AMAZING. There’s no added sugar so they are actually really great macros and the perfect sweet treat!
Makes 12 muffins (really, enough for 13 but Oakley ate a ton of batter) or you can make a bread loaf using a 9 x 5 pan
Ingredients
- 3 ripe banans
- 1 cup cottage cheese
- 2 eggs
- 2 tsp vanilla extract
- 1 1/2 cups kamut flour (or flour of choice)
- 2 tsp baking power
- pinch of salt
- 1 cup chocolate chips (I used SWERVE)
Directions
- Preheat oven to 350
- Line muffin tin or spray bread pan
- Mash bananas in a large bowl, add cottage cheese, eggs, vanilla, baking powder, and salt- mix
- Add in flour last
- Fold in chocolate chips
- Fill 12 muffin tins or a 9 x 5 bread pan
- Bake for 30 minutes for muffins and 40 minutes for bread
Let cool and enjoy!
Macros per muffin: 162 calories / 28g carbs / 7.5g fat / 7g protein
