This is definitely going to be added to our rotation of recipes! It was so good, took minimal time, and is low carb- perfect for us! As always, you don’t have to use venison, you can use whatever ground meat you have available to you.
Ingredients
- 2lbs ground venison (or meat of choice)
- 2 TBSP butter
- 1 onion- finely chopped
- 1 orange bell pepper- chopped
- 2 cups grated carrots
- 1/2 head of purple cabbage, sliced
- 2 TBSP minced garlic
- 1 TBSP lime juice
- 1 orange- juiced
- 1/2 cup soy sauce or liquid aminos
- For topping: chopped green onions, sesame seeds, sriracha mayo, etc
Directions
- Over medium heat, add 1 TBSP butter and ground meat. Cook until browned. Drain and set aside
- While meat is cooking, prep and chop veggies
- Add 1 TBSP butter to pan and add onions and peppers, cook for 5 minutes
- Add carrots and cabbage- stir frequently and cook another 7 minutes
- Add garlic, lime juice, orange juice, soy sauce, meat
- Stir to combine and cook an additional 5-7 minutes, covered
- Serve and enjoy!
