A perfect recipe for chilly fall and winter days: Venison Sausage Tortellini Soup! You can easily sub any sausage for this recipe if you want, the venison is simply what we use out of our freezer!
Ingredients
- 1lb venison sausage
- 1 yellow onion- diced
- 3 cloves minced garlic
- 3 TBSP flour
- 1 tsp dried basil
- 1/2 tsp oregano
- 1 tsp hot suace
- 1 cup heavy cream
- 5 cups broth of choice
- 2 cups kale- chopped
- 2 cups refrigerated tortellini
- Salt / pepper to taste
Directions
- Cook and crumble sausage and diced onions over medium heat until onions are softened and sausage is cooked. Drain grease. Add garlic and cook 1 minute
- Add flour and cook 1-2 minutes
- Add all seasonings and hot sauce
- Add broth, add cream, brith to a boil and reduce to a simmer
- Add kale and tortellini and simmer for 3-5 minutes (if tortellini needs a longer cook time, add that first and then kale for last 5 minutes)
- Add salt / pepper, serve!
