Hi guys! Thank you so much for checking out this new Bowmar recipe!! Y’all this meal is the BEST to make for a dinner for two because there are always leftovers and it reheats so well! It is full of flavor and has something that everyone enjoys. My sister makes this recipe all the time and she loves packing it in her lunch for work (she is a night shift nurse so not many things are this easy to pack/crave at her “lunch” time). Also even the pickiest of eaters will eat this roasted broccoli because it is so crispy and good! If you can chop up all the things ahead of time when you are free, then all you have to do is dump the bowl of mixed up ingredients onto a baking sheet, throw it into the oven and enjoy! This meal would also be super easy to make when hosting friends!
Ingredients
1 Broccoli crown (personally I buy it fresh rather than frozen because I think it roasts in the oven so much better! I like my broccoli crunchy and full of flavor and spices! I think the fresh stuff does it the best!)
1 bag of petite gold potatoes
1 Polska Kielbasa
1/2 yellow onion
1 TBSP Garlic powder
1/2 TBSP Pepper
Olive oil
Directions
Preheat oven to 400
Cut broccoli
Cut potatoes into halves (may need to be fourths depending on the size of the potato)
Cut kielbasa into thin slices
Chop onion
Combine all ingredients into bowl and drizzle olive oil and sprinkle garlic powder and pepper as you stir all of the ingredients together
Pour out all ingredients onto a baking sheet
Place in the oven for 20 minutes (stir while in oven), then keep in oven for an additional 20 minutes or until the potatoes are tenderly cooked
Scoop this meal into a bowl and enjoy!
I love meals with lots of color and that are super filling! Also, did I mention how good the left overs are? Let me know if you have any questions!! Happy cooking!
