Ingredients
- 2lbs ground meat (I used our antelope)
- 3 celery stalks- sliced
- 3 cups sliced carrots
- 1 medium yellow onion, diced
- 2 TBSP olive oil
- 4 TBSP minced garlic
- 1lb yukon potatoes cut into 1 inch pieces
- 1 (14.5oz can) diced tomatoes (I prefer fire roasted)
- 1 (15oz can) corn- drained
- 4-6 cups bone broth or beef broth
- 2 tsp Italian seasoning
- Salt and pepper to taste
Directions
- In a large pot, heat the olive oil over medium-high heat. Once it’s hot, add the onion, celery, and garlic and cook for 2 -3 minutes
- Add the ground meat and brown
- Stir in the remaining ingredients. Add additional broth to reach desired consistency
- Turn the heat up to high and bring to a boil. Once boiling, turn the heat down to medium – high heat and simmer covered for 14 – 16 minutes
