Muffin Ingredients (makes 12)
- 1 ¼ cup Kamut or AP flour
- 1 cup pumpkin puree
- ¾ cup greek yogurt
- 2 large eggs
- ½ cup packed vanilla flavored protein powder
- ½ tsp pumpkin pie spice
- 1 tsp Cinnamon
- 1 tsp Baking powder
- 1 tsp baking soda
Cottage Cheese Frosting Ingredients
- 2 cups cottage cheese
- 1/4 cup cream cheese, softened
- 1/3 cup powdered sugar
- 1 teaspoon pure vanilla extract
Muffin Directions

Preheat oven to 350 degrees F

Add the oat flour, pumpkin, greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda to a large mixing bowl and stir with a hand mixer or wooden spoon until combined

Distribute into 12 greased muffin liners

Bake for 20-25 minutes or until a toothpick comes out clean
Frosting Directions

Add the cottage cheese to a fine mesh sieve or strainer set over a bowl. Let it drain for 20 minutes to remove excess liquid, stirring a few times

Once drained, add the cottage cheese to a food processor along with cream cheese, powdered sugar, and vanilla extract. Blend until smooth

Transfer into a bowl, and refrigerate for 30 minutes or until it firms up

Once muffins have cooled, frost and enjoy!
