Protein Cut Out Christmas Cookies

Ingredients (makes about 20 cut-out cookies)

  • Cookie Dough
    • 1 cup flour
    • 1/2 cup vanilla protein powder 
    • 1/2 cup coconut oil (melted)
    • 1/2 cup honey
    • 1 egg
    • 1 tsp vanilla or almond extract
    • 1 tsp baking powder
    • 1/4 tsp salt
  • Frosting
    • 4oz cream cheese
    • 1/4 cup Greek yogurt
    • 1/4 cup honey
    • 2 TBSP lemon juice
    • 1/2 tsp vanilla or almond extract
    • Sprinkles to decorate

Directions

  • Set oven to 350
  • In a bowl, combine dry ingredients
  • Slowly add the honey, the egg, and the extract
  • If the dough is sticky, add a little more flour (but more will be incorporated while rolling)
  • Once the dough is ready, cover the counter with flour to roll the dough to about 1/4 inch thick
  • Press cookie cutters and place cut dough on a sprayed cookie sheet
  • Continue to roll and cut out until all of the dough is used
  • Bake for 8 – 10 minutes
  • While the cookies are baking, make your frosting
  • Wait until the cookies are cooled entirely before frosting and adding sprinkles
