Ingredients
- Cookies
- 1/2 cup butter- room temp
- 1/2 cup granulated sugar
- 1 egg
- 1 cup whole milk ricotta
- 2 cups flour
- 1 TBSP baking powder
- 1/4 tsp salt
- 2 TBSP lime juice
- Zest from one lime
- Glaze
- 1 cup powdered sugar
- 2 – 3 TBSP lime juice
- Zest for topping
Directions
- In a large mixing bowl, cream the butter, sugar and egg until fluffy
- Add the remaining ingredients and blend until smooth
- Cover the dough and chill for an hour
- Preheat oven to 350 and line a cookie sheet with parchment paper or spray with cooking spray
- Drop the dough by the TBSP about 2 inches apart
- Bake 15 – 17 minutes
- Let the cookies cool completely before making glaze
