Easy. Delicious. Reheats. Kids love it. Easy clean-up. What else do you need to add this into your weekly dinner rotation? As always- you can sub the elk for beef, venison, ground turkey, etc!
Ingredients
- 12oz bowtie pasta
- 1 TBSP olive oil
- 2lb ground elk
- 1 small onion, diced
- 3 TBSP garlic
- 1 can (14.5oz) diced tomatoes, undrained
- 2 cups beef broth
- 1 tsp Italian seasoning
- 1/2 tsp salt and pepper
- 1 cup heavy cream
- 1 cup shredded parmesan cheese
Directions
- Cook the pasta according to the package until al dente. Drain and set aside
- While the pasta is cooking, add the oil to a skillet over medium heat. Add elk and onion and cook until elk is browned and the onion is softened
- Add the minced garlic, diced tomatoes (with their juice), broth, and seasonings. Bring mixture to a simmer and cook for 5-7 minutes
- Reduce the heat, add heavy cream, and cook for 2-3 minutes. Turn off the heat and stir in the cheese
- Once everything is combined, add pasta to the skillet and toss until evenly coated
- Enjoy!
