Date and Oatmeal Bars

Ingredients

  • Date Filling Ingredients
    • 2 cups pitted dates- chopped
    • 2 TBSP honey
    • 2/3 cup hot water
    • pinch of sea salt
  • Bar Ingredients
    • 1 cup flour
    • 1/4 tsp baking soda
    • 1/2 cup brown sugar
    • 1 cup old fashioned rolled oats
    • 1/2 cup cold butter

Directions

  • Prep filling first. In a saucepan over medium heat, combine dates, hot water, honey, and salt. Cook until the dates are softened and water is absorbed. Mash together with a spoon or potato masher. Set aside and let cool while you make the bars
  • Set oven to 350 and line an 8×8 with parchment paper
  • In a medium sized bowl, combine your bar ingredients together (besides butter)
  • Work in butter with a fork until the mixture is crumbly
  • Spread 3/4 of the mixture onto the bottom of the pan, pressing down with your fingers to create a base
  • Cover with the cooled date filling and sprinkle remaining mixture on top
  • Bake for 20 – 25 minutes until lightly browned
  • Remove and let cool before cutting and serving
