Ingredients
- Date Filling Ingredients
- 2 cups pitted dates- chopped
- 2 TBSP honey
- 2/3 cup hot water
- pinch of sea salt
- Bar Ingredients
- 1 cup flour
- 1/4 tsp baking soda
- 1/2 cup brown sugar
- 1 cup old fashioned rolled oats
- 1/2 cup cold butter
Directions
- Prep filling first. In a saucepan over medium heat, combine dates, hot water, honey, and salt. Cook until the dates are softened and water is absorbed. Mash together with a spoon or potato masher. Set aside and let cool while you make the bars
- Set oven to 350 and line an 8×8 with parchment paper
- In a medium sized bowl, combine your bar ingredients together (besides butter)
- Work in butter with a fork until the mixture is crumbly
- Spread 3/4 of the mixture onto the bottom of the pan, pressing down with your fingers to create a base
- Cover with the cooled date filling and sprinkle remaining mixture on top
- Bake for 20 – 25 minutes until lightly browned
- Remove and let cool before cutting and serving
