Elk Stroganoff

Ingredients

  • 2 pounds ground elk (or beef)
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 ounces butter
  • 1 white onion- diced
  • 2 cups beef broth
  • ⅓ cup sour cream
  • ⅓ cup white wine
  • salt and ground black pepper to taste
  • 3 cups egg noodles- cooked per the brand’s directions

Directions

  • Add butter, elk, and onion to a skillet. Brown meat over medium heat, drain excess fat
  • While meat is cooking, bring water to a boil and cook your noodles to al dente
  • Stir in broth and bring to a boil. Lower the heat and let simmer for several minutesa
  • Stir in sour cream, white wine, and salt and pepper
  • Add cooked noodles and stir together
  • Top with sage if desired
