Pumpkin Donuts with a Maple Glaze

So yummy and perfect for fall!

Yields 6, double, or triple as desired

Ingredients

  • Donuts
    • 3/4 cup Kamut flour or 1 cup All-Purpose
    • 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1/2 tsp cinnamon
    • 1/2 tsp pumpkin pie spice
    • 1/4 cup coconut oil
    • 1/3 cup brown sugar
    • 1 large egg
    • 1/2 cup pure pumpkin (not pie filling)
    • Splash of milk
    • 1/2 tsp almond extract (or vanilla)
  • Maple Glaze
    • 1/3 cup brown sugar
    • 1/8 cup milk
    • 1 TBSP butter
    • 1/2 cup powdered sugar
    • pinch of salt
    • 2 TBSP maple syrup
  • Optional: cinnamon sugar for topping

Directions

  • Preheat oven to 375 and spray a donut mold
  • Combine all donut ingredients in a large bowl
  • Spoon batter into donut mold evenly (these will be very full)
  • Cook for 10-12 minutes (until the top starts to get slightly crunchy)
  • Let cool completely before making glaze
  • Over medium heat, melt butter and brown sugar together. Remove from heat and add remaining ingredients
  • Let the glaze sit for 5 minutes before drizzling over the donuts
  • While the frosting is still wet, sprinkle cinnamon sugar topping if you’re using
  • Enjoy!
