Gingerbread Muffins

Ingredients

  • 1 3/4 cups Kamut flour or 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp cloves
  • 1/4 cup brown sugar
  • 1/2 cup dark molasses
  • 1/2 cup milk
  • 1 stick butter- melted and cooled
  • 2 eggs
  • granulated sugar to top

Directions

  • Set oven to 400 and either line a muffin tin or spray with oil (yields 12)
  • In a large bowl, combine all ingredients (minus granulated sugar)
  • Fill muffin tins evenly and top with granulated sugar
  • Bake for 5 minutes at 400 and then reduce heat to 350 and bake an additional 10 – 12 minutes or until tops begin to crinkle
  • Allow muffins to cool in the pan for 5 minutes and then transfer to a cooling or wire rack to cool completely
