Cream Cheese Pumpkin Protein Muffins

You need these this weekend, that is all. 

I try to include macros for my protein recipes

1 Muffin: 206 calories / 9g fat / 23g carbs / 7g protein

Ingredients

  • Muffin Ingredients
    • 1 cup Kamut flour or All-Purpose
    • 2 scoops Bowmar Nutrition Protein Pumpkin Spice (can omit and do an additional 3/4 cup flour)
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1 tsp ground cinnamon
    • 1/2 tsp ground ginger
    • 1/8 tsp ground cloves
    • 1/4 tsp ground nutmeg
    • 1/3 cup sugar
    • 1/4 cup brown sugar
    • 1 10oz can pumpkin puree (not pie filling)
    • 1 egg
    • 1/4 cup olive oil
    • 1/2 tsp almond extract
  • Cream Cheese Ingredients
    • 1/2 cup cream cheese- softened
    • 2 TBSP sugar
  • Cinnamon Sugar Topping Ingredients
    • 1 TBSP sugar 
    • 1/2 tsp ground cinnamon
    • Pumpkin seeds

Directions

  • Set oven to 350. Line a muffin tin or spray with oil and set aside
  • In a large bowl, combine all muffin ingredients and stir- do not over-mix
  • Evenly fill amongst all 12 in the muffin tin
  • Mix your cream cheese ingredients and top each muffin with an even amount
  • Mix cinnamon sugar topping and sprinkle over the cream cheese
  • Bake for 18-22 minutes or until muffins are beginning to crust on top (you’ll know)
  • Let cool and enjoy!
