Our apple trees are producing like crazy right now, so be prepared for a ton of apple-themed recipes!
Ingredients
- 3 medium red apples, chopped (peel if desired; I did not)
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 2 large eggs
- 1/4 cup white sugar
- 1/4 cup oil
- 1/4 cup cottage cheese
- 2 tsp almond extract
- 3/4 cup Kamut flour or 1 cup all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
Glaze
- Caramel Sauce
- Sea Salt
Instructions
- Preheat oven to 350. Spray bread loaf tin with cooking spray
- In a medium bowl, mix apples, ginger, cinnamon, and brown sugar together– set aside
- In a large mixing bowl with a dough hook, whisk together egg, white sugar, oil, cottage cheese, and almond extract
- Add flour, baking soda, and salt; mix together
- Fold in 3/4 of the apples into the batter
- Pour into prepared bread tin
- Top the batter with the remaining apple chunks and bake for 50-55 minutes
- Remove and let cool
- Before serving, add caramel and salt, and enjoy!
