Feel free to get creative, too. If you have other nuts or berries in your house that you want to use up, throw them in, too, if it sounds good to you 🙂
Ingredients
- 2 cups corn or rice Chex cereal
- 1 cup quick oats
- 1 tsp cinnamon
- 2 tsp pumpkin spice
- 1 tsp nutmeg
- 1/4 tsp salt
- 1 cup cashews
- 1/2 cup pumpkin seeds
- 1 stick of butter
- 1/2 cup honey
- 1/4 cup brown sugar
- 1 cup dried cranberries
Directions
- Line a baking sheet with foil or parchment paper and set your oven to 325
- In a large bowl, combine cereal, oats, cashews, pumpkin seeds, cinnamon, nutmeg, pumpkin spice, and salt
- Melt butter, honey, and brown sugar in a small pot over medium heat. Bring to a low boil, remove, and pour the mixture over the cereal. Stir to coat evenly
- Spread the mixture evenly on the sheet and bake for 20 minutes
- Remove from oven, add cranberries, stir, and bake for another 10 minutes
- Transfer the granola from the baking sheet to the paper and let it cool directly on the counter (not the hot baking sheet). It will start to become crunchy as it cools
