Okay, honestly, I didn’t know what to call these. They were one of the best desserts I have ever made, but they were so soft that you had to eat them with a fork (which isn’t the worst thing in the world). I wish we had some protein vanilla ice cream (with the cream) to go along with it—next time!
Ingredients
- Blondies
- 1.5 cups Kamut flour (or 2 cups all-purpose flour)
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup butter- softened
- 1/4 cup sugar
- 1 cup dark brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Apple Pie Filling
- 2 large apples- sliced thinly
- 2 TBSP brown sugar
- 1 TBSP butter
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
Directions
- Preheat oven to 350 and spray an 11 x 7 pan
- On medium-low heat, cook the apple filling mixture for about 4 minutes; let cool
- Cream butter and sugar- about 1 minute
- Add remaining ingredients- adding flour last
- Spread batter and then spread apple filling
- Cover with foil
- Bake 35 minutes
- Let cool and serve with protein ice cream 🙂
