If you have yogurt that’s about to expire or want to sneak some extra protein into some muffins, this recipe is for you! Feel free to get creative with your yogurt flavor and the fruit you choose to use! I have made these now with strawberries (and strawberry yogurt) and blueberries (and blueberry yogurt); the possibilities are endless!
Ingredients
- 2 large eggs
- 1 cup greek yogurt
- 1/2 cup honey or maple syrup
- 2 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup oats
- 1 1/2 cups Kamut flour
- 1 1/2 cups chopped strawberries
- Zest of 1 lemon
Directions
- Preheat oven to 375 and spray 12 muffin tin or 36 mini muffin tin
- In a large mixing bowl, combine eggs, yogurt, honey or syrup, vanilla, baking powder, baking soda, and salt
- Add oats and flour and gently stir
- Fold in strawberries and lemon zest
- Fill muffin tins with batter
- Bake for 20-22 minutes or until a toothpick inserted comes out clean
- Let cool and enjoy!
