I had all these ingredients in my pantry, and they came together to make the best homemade granola! Sub anything you would like, and feel free to get creative!
The one note I will say is that I used honey instead of syrup, so I don’t feel like it was “sticky” enough to make big granola crumbles. So, if that is what you are after, I recommend subbing the honey for maple syrup.
Ingredients
- 4 cups rolled oats
- 1 cup chopped nuts (walnuts, pecans, cashews)
- 1/2 cup pumpkin seeds
- 1/4 cup hemp hearts
- 1 TBSP chia seeds
- 1/2 tsp cinnamon
- 1/2 cup shredded coconut
- 1/2 cup melted coconut oil
- 1/2 cup honey
- 1 tsp vanilla extract
Directions
- Set oven to 350
- Mix all dry ingredients minus salt
- In a microwave-safe bowl, melt coconut oil
- Add honey, vanilla, and salt to coconut oil
- Spread over mixture and mix to coat
- On a parchment-covered cookie sheet, spread granola into single layers (mine took two standard-sized cookie sheets)
- Bake for 10 minutes and stir
- Bake an additional 5-10 or until the top of oats turn golden brown
- Let stand for 45 minutes to cool- do not stir again
- Enjoy once cooled and store in an air-tight container
