I don’t like tomatoes but I have three dozen tomato plants in my garden. Why? Salsa. Spaghetti sauce. Sloppy joe sauce. Pizza sauce. Ketchup. Pico. ALL THE THINGS
I am so proud of how this sauce turned out given it was my first time ever making it! We have tomatoes coming out of our ears and this batch used up almost all of them- this made 11 cups of sauce and we are going to go through it within two weeks with all of the recipes I have planned!
Ingredients
- 12 cups tomatoes- chopped
- 6 TBSP olive oil]
- 2 TBSP minced garlic
- 1 cup white onion- chopped
- 2 TBSP brown sugar
- 8 TBSP tomato paste
- 1/2 tsp dried thyme leaves
- 1/2 tsp dried oregano
- 8 bay leaves
- 2 tsp salt
- 1 tsp pepper
Directions
- Chop tomatoes into small pieces and chop onions
- Add garlic and oil into a dutch oven with the heat on low for a minute
- Add in dried herbs, onions, bay leaves- saute for 2 minutes
- Clear a spot in the dutch oven and add brown sugar- let it caramelize and does not burn
- Add in tomatoes and tomato paste
- Season with salt and pepper to taste
- Cover the pan, lower the heat and simmer for 15 minutes
- Use a hand blender to blend to a smooth paste
- Let cool and add to mason jars or use immediately
