Venison Stuffed Pepper Bowl

Ok so it’s more like an un-stuffed bowl but this recipe is a low carb dream! You also can add rice- don’t worry! But either way, it is incredible. As always, I used our venison from the freezer but feel free to use any ground meat that you have!

Ingredients

  • 2lbs ground venison
  • 1 red, yellow, and green pepper- chopped
  • 1 small onion- chopped
  • 1 TBSP garlic cloves- minced
  • 2 tsp salt
  • 1 tsp black pepper
  • 3 tsp italian seasoning
  • 4 TBSP tomato paste
  • 2 15oz cans diced tomatoes
  • 2 TBSP olive oil

Directions

  • Heat olive oil and add venison, peppers, onions, and garlic. Cook until meat is browned
  • Add tomato paste and diced tomatoes
  • Bring to a boil and then reduce heat to simmer, covered, for 20 minutes
  • Remove from heat and serve- add to rice if desired
