Josh made the fatal mistake of getting Oakley a pink cake pop from Starbucks a few days ago and now all she asks about is a “pop cake” or a “lollipop cake”. So I decided to make my own at home as my goal for 2023 is to make what I can at home. Why? I can control the ingredients, it’s less expensive, and it’s a fun activity for Oakley. Plus- I get to use some of my sourdough starter for this. You don’t have to use sourdough if you don’t want, in fact- you can use a vanilla box cake mix instead of making your own! You can buy frosting from the store if you want as well.
Cake Ingredients
- 2 cups flour
- 1 cup sugar
- 1 tsp salt
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 cup butter- softened
- 1 TBSP vanilla extract
- 1/2 cup active sourdough starter
- 1 cup water
- 3 whole eggs
Frosting Ingredients
- 2 cups powdered sugar
- 1 TBSP milk
- 1 TBSP melted butter
Cake Pop Items
- Melting chocolate
- Sprinkles
- Sticks
Directions
- Preheat oven to 350 and spray a 9 x 13 glass dish
- In a bowl (either stand mixer or large bowl), combine all dry cake ingredients
- Add liquid ingredients while mixer is running
- Mix until smooth without clumps
- Bake for 30 – 35 minutes until it becomes golden around the edges
- Let cake cool
- Once cake is cooled, make frosting by coming all ingredients together in a bowl
- Crumble cake with hands and add frosting (don’t add all at once, you may not need it all)
- Combine frosting and cake with hands until it becomes a doughy consistency
- Roll cake pops into small balls and insert cake pop sticks (I roll them and place them in a glass dish side by side)
- Once all sticks are inserted, melt your chocolate (follow the directions on the packaging)
- Add a small amount of chocolate to the base of the stick on the ball
- Place in freezer until chocolate hardens
- Roll cake pops in melted chocolate and add sprinkles (if desired)
- Enjoy!
