If you are like our family and love turkey hunting- I hope you use this recipe on your next bird! Multiple batches could be made from one breast alone. If you want to use store bought or chicken- this recipe will work just as well with that meat as well!
Ingredients
- 2lbs cooked turkey breast*
- 1 medium onion- diced
- 2 cloves minced garlic
- 15oz chicken broth
- 15oz can corn- undrained
- 15oz can tomatoes and green chiles- undrained
- 11oz can enchilada sauce
- 1 packet taco seasoning
- Optional toppings: shredded cheese, sour cream, crunchy tortilla strips
Directions
- Add all ingredients to crockpot. Cook on high for 2-3 hours, stirring occasionally
*For my wild turkey, I will simply cook in the crockpot. Set crockpot to high, remove all feathers from breast, add breast to crockpot and cover with water. Takes 4-5 hours depending on size of breast
