If you couldn’t tell, I am a huge fan of Brussels Sprouts over lettuce for salads. They are so much more filling and flavorful!
Ingredients
- 4 cups shaved Brussels (you can buy them pre-shaved)
- 1 shallot- chopped
- 1 tsp garlic powder
- 2 TBSP olive oil
- 1/3 cup pomegranate seeds
- 1/3 cup chopped pecans
- 1/3 cup blue cheese or goat cheese
- Salt and pepper to taste
- Balsamic vinegar
Directions
- Set oven to 425
- On a sprayed cookie sheet, add Brussels and chopped shallot
- Coat with olive oil, add garlic powder and toss
- Bake for 25 minutes, tossing halfway through
- Add toppings once Brussels are removed from the oven
- Enjoy!
