I am always looking for ways to make wild turkey fancy, and I think these do just that! As always, use store-bought turkey breasts or chicken breasts—don’t limit yourself to the wild game I use!
Ingredients
- 6 cups cornflakes
- 1/4 cup shredded parmesan cheese
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 3 large eggs
- 2 pounds turkey breast (or chicken) – sliced like tenderloins or strips
- Olive oil for drizzling
- Hot honey (or regular honey)
- Fresh thyme or parsley for serving
Directions
- Preheat oven to 425
- Combine the cornflakes, parmesan, onion powder, garlic powder, and salt in a food processor. Pulse until you have fine crumbs and transfer to a shallow bowl
- Beat the eggs in a bowl and toss the turkey to coat
- Dredge the turkey through the crumbs, covering it fully
- Place on a prepared baking sheet, drizzle with oil and bake for 20-25 minutes (until crisp all around)
- Once the turkey is done cooking, remove from oven and drizzle with honey and top with herbs
