These are perfect if you are looking for something that isn’t sickly sweet and over the top!
Ingredients
- Cake
- 2 cups kamut flour (or 2.5 all-purpose)
- 4 large eggs
- 2/3 cup honey
- 2/3 cup butter- room temperature
- 1/2 cup milk
- 2 tsp pure vanilla extract
- 3 TBSP fresh lemon juice (about 1 1/2 lemons)
- Zest from the above lemons
- 1 tsp baking soda
- 1/4 tsp salt
- Frosting
- 1/4 cup butter at room temperature
- 4oz cream cheese at room temperature
- 2 tsp pure vanilla extract
- 1 cup powdered sugar
Directions
- Preheat oven to 350
- Lightly grease or spray 9 x 9 inch baking dish (code SARAH_BOWMAR10 for 10% off)
- In a stand mixer, add eggs and beat until frothy. Add honey, butter, milk, vanilla, lemon juice and zest and beat until combined
- Add flour, baking soda, and salt and mix- do not over-mix
- Pour the batter into the prepared baking dish and bake for 35-40 minutes
- Combine all ingredients for frosting if you’re making at home
- Cool the cake completely before frosting
