Here’s the tool I use to shred my zucchini from the garden
*This recipe yields two dozen full sized muffins
Ingredients
- 3 cup grated zucchini
- 1 cup pure pumpkin
- 3/4 cup granulated sugar
- 1/2 cup olive oil
- 2 large eggs
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- Handful of chocolate chips
- Coarse salt for topping
Directions
- Set oven to 350
- Mix all ingredients minus coarse salt
- Line muffin tin with liners
- Divide batter into 24 muffin tins, filling about 2/3 full
- Top with salt
- Bake 17 – 20 minutes
