I picked the last of my zucchini this week, so zucchini bread was on the menu, especially with the fall temperatures right around the corner. This recipe is easy and will make two loaves (in a bread pan)! I will freeze one and keep the other out (it goes quickly in our house)!
Ingredients
- 3 cups grated zucchini (do not drain liquid)
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2/3 cup olive oil
- 1 cup unsweetened applesauce
- 4 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
Directions
- Preheat oven to 350
- Spray 2 9×5 loaf pans, set aside
- In a bowl, combine (whisk) all ingredients except flour
- Mix in flour cup at a time
- Pour batter into loaf pans
- Bake 55 minutes or until a toothpick inserted in center comes out with crumbs on it
- Cool in pan for 15 minutes
- Enjoy!
