I don’t think I will ever a regular oatmeal cookie ever again- these were INCREDIBLE, extremely easy, and healthy enough to be a breakfast cookie. I ended up making four batches because we have so many zucchinis coming out of the garden right now!
Ingredients
- 2 cups quick oats
- 1/2 cup flour
- 1/2 tsp baking soda
- 1 tsp salt
- 1/2 cup honey
- 1/4 cup packed brown sugar
- 1/2 cup butter- melted
- 1 large egg
- 2 tsp vanilla extract
- 2 cups grated zucchini (don’t ring moisture out)
- 1/2 cup chocolate chips (I did 1/2 the batter plain and the other 1/2 with chocolate chips- if you want all of the cookies to have chocolate chips- do 1 cup. I also have added natural chocolate candies before too)
Directions
- Preheat oven to 350
- In a bowl, combine all ingredients minus zucchini and chocolate chips
- Mix together until combined
- Fold in zucchini and chocolate chips
- On a parchment covered cookie sheet, drop dough and mash into circles (I made about 16 medium sized cookies)
- Bake for 15 minutes
- Remove from oven and let cool on cookie sheet
Salted Caramel Variation
- Use the plain base above and once cooled, drizzle caramel sauce and sea salt on top!
